Cranberry slices with hazelnuts – a fruity layer cake

These cranberry slices with hazelnuts combine a moist hazelnut base with fruity cranberries, airy cream, and a delicate layer of dark chocolate butter cookies. A wonderfully creamy and fruity combination with a light crunch. 🍰❤️

Ingredients for 12 pieces
For the hazelnut base
225 g butter
225 g sugar
6 eggs
300 g ground hazelnuts
2 tablespoons of flour
1 packet of baking powder
For the filling
3 cups of cream
1 jar of cranberries
1 packet of butter biscuits
1 glass of grape juice
1 package of dark chocolate couverture
preparation
1. Bake the hazelnut base
Cream together the butter and sugar. Gradually add the eggs and mix well.

Mix ground hazelnuts, flour and baking powder together and stir into the butter-egg mixture.

Spread the dough onto a prepared baking sheet and bake at 175°C (350°F) using convection for about 20 minutes . Then let it cool completely.

2. Cream and cranberries
Whip the cream until stiff.

Distribute the cranberries evenly over the cooled hazelnut base. Then spread the whipped cream over them and smooth it out.

3. Butter biscuit layer
Place the butter cookies close together on the layer of cream.

If desired, the cookies can be carefully brushed with a little grape juice. This will make them slightly softer and more aromatic.

4. Chocolate coating
Melt the dark chocolate coating and pour it evenly over the butter cookies.

Then chill the cranberry slices so that the individual layers become nice and firm.

💡 Tip
For an extra fresh taste, you can add some lemon juice to the whipped cream . The slight acidity goes perfectly with the sweet cranberries and hazelnuts.
